Amaranth (all forms)

Originally cultivated by Mayan and Incan civilizations, amaranth is a gluten-free grain containing lysine, an amino acid used by the body to make protein. It's high in fiber, calcium, iron, and phytosterols. It can be flaked for use in cereals, cooked as a whole grain, or substituted for flour.
