Artichoke (all forms)

Hailing from the Mediterranean, artichoke is free of fat, saturated fat, and cholesterol, and is an excellent source of fiber, vitamin C, folate, and magnesium. As an extract, artichoke has been shown to lower cholesterol in those with moderately raised levels. In Europe, artichoke has traditionally been used to improve digestive and urinary tract health.
