When the glucosinolates in broccoli are metabolized by the body after eaten whole, they become powerful anti-cancer agents called isothiocyanates. The properties of broccoli as a supplement are still under question, but most experts agree that it would be difficult to consume the number of sprouts necessary for efficacy, and that supplementation with broccoli extract can yield anticarcinogenic benefits.
